The grapes are hand-harvested from two separate blocks at dawn and brought to the winery and vinified separately. The CF-8 block sees open top fermentors with a cold soak for about 5 days, then this lot is warmed up for spontaneous fermentation. We punch down 2-3 times a day, gently extracting the best qualities out of the wine before gently pressing after two weeks on skins. Block CF-2 grapes are 100% destemmed then must pumped to a closed top tank, here fermention starts spontaneously and we pump over twice a day at the beginning and then scale back to once a day and transition to punch downs as the ferment progresses. It is pressed after two weeks on skins. After pressing, both wines go to barrels with 50% new French oak, they are aged for 18 months before blending and bottling.

This wine is sourced from vines planted in 1995 at our Catapult Ranch in the Petaluma Gap AVA. Catapult Ranch provides big fruit and structure adding backbone and intesity to the wine. It is slightly sheltered at the base of Wildcat Mountain in the far South East corner of the cool Petaluma Gap. The vineyard is nestled in some low rolling hills and although it sees significant wind and fog, it is slightly warmer than more exposed spots in this region. Harvest is usuallly late October, this long growing season allows for intense flavored grapes with thick skins. 2023 was an extremely cool vintage with a cool, wet Spring and unseasonably mild Summer leading into a wet Fall. This meant that lots of work was required in the vineyard to ripen the grapes and keep them disease free but lead to one of our favorite vintages in recent history.
