Grapes are only destemmed, maceration during fermentation is extended to 18 – 20 days maintaining a constant temperature between 24 and 28 °C. The wine is partly wood-aged in 2nd or 3rd vintage tonneaux or barriques for 12 months and partly steel-aged. Assemblage in concrete for a minimum of 6 month is followed by matu-ration in bottle for at least 6 months.
