The 2022 St Huberts The Stag Paso Robles Cabernet Sauvignon is plusher and richer than previous vintages, displaying a dark burgundy hue and expressive aromas. Notes of caramel and baking spices from the oak influence intertwine with pronounced ripe red berries on the nose. The palate presents velvety-rich tannins complemented by a strong core of dark blackberry, black raspberry, and Damson plum. These flavors are supported by a full body that carries robust notes of cedar, cinnamon, and toasty oak. Smooth and inviting, this Cabernet exudes elegance, grace, and depth, finishing long and sumptuous.

Using a modern approach, the grapes were crushed and fermented an average of seven to 10 days in stainless steel tanks. Pump-overs were gently performed three times a day to extract optimum color and tannin. Post fermentation, a portion of the wine was integrated with French and American oak for up to two years to smooth and round the tannins and to add complexity and depth of flavor. Finally, each of the lots were tasted daily to determine exactly which would be selected for the final wine.
