Description
All the traditions and heritage of Mexico live in our agave plants (Agave means “in Greek). Our Espadin Agaves are carefully selected by our Maestro Mezcalero and harvested at 8 years of age, having reached optimum ripeness. Their hearts or piñas are slowly cooked in pre-Hispanic volcanic stone pits for 3 to 4 days, under the mantle of their leaves. The agave juice is traditionally extracted by scraping the cooked piñas with a stone pulled by a mule called a Tahona. It is then fermented in oak vats and distilled twice in copper stills.
